Cinnamon Toast Crunch Banana Bread

Ingrédients

Banana Bread Batter

3 ripe bananas — 300–360 g

5 tablespoons melted butter — 70 g

1 egg — 50 g

1/4 cup Greek yogurt or sour cream — 60 g

1/2 cup brown sugar — 100 g

1/4 cup sugar — 50 g

1 tsp baking soda — 5 g

1 tsp cinnamon — 3 g

Dash of salt — 1–2 g

1 1/4 cup flour 156 g

Cinnamon Middle Layer

2 1/2 tbsp flour — 19–20 g

1/3 cup brown sugar — 67 g

2 tsp cinnamon — 5–6 g

Mix these together until crumbly.

Cinnamon Streusel Topping

3 tbsp melted butter — 42 g

1/2 cup flour — 60 g

1/2 cup brown sugar — 100 g

2 tsp cinnamon — 5–6 g

Combine everything in a small bowl until a crumbly streusel forms.

Instructions

Mash bananas in a medium bowl until smooth. Add in melted butter and Greek yogurt/sour cream. Mix until combined. Mix in the brown sugar, sugar, egg, and vanilla (if using) until smooth. Add the baking soda,cinnamon, salt, and flour. Gently mix until the batter forms—don’t overmix. Pour half the batter into a greased loaf pan. Sprinkle the cinnamon middle layer evenly over the batter. Pour the rest of the batter on top. Add the streusel topping evenly over the surface. Bake at 375°F (190°C) for 45–60 minutes, or until a toothpick comes out clean. Let cool before slicing.
