Cottage Cheese Stuffed Capsicums

Ingrédients

3 large capsicums (bell peppers), halved and seeds removed

Olive oil spray or 1 tsp olive oil

Filling

1½ cups low-fat cottage cheese

2 eggs (binds + extra protein)

½ cup spinach, finely chopped

¼ cup red onion, finely diced

½ cup zucchini or mushroom, finely chopped

¼ cup feta (optional, for flavour)

1 tsp garlic powder or 1 clove garlic, minced

½ tsp smoked paprika

½ tsp oregano or Italian herbs

Salt & pepper to taste

Optional Protein Boosts

½ cup cooked lentils or chickpeas

2 tbsp hemp seeds

¼ cup grated mozzarella or parmesan

Instructions

Preheat oven to 180°C (350°F).

Lightly oil capsicum halves and place cut-side up in a baking dish.

In a bowl, mix cottage cheese, eggs, veggies, herbs, and seasoning.

Spoon filling evenly into capsicums.

Cover loosely with foil and bake 25 minutes.

Remove foil and bake 10–15 minutes more until set and lightly golden.
