Potato Soup

Ingrédients

• 1 stick of butter

• 3 large onions

• 2 cans chicken broth

• 2.5 cups water

• 5 lb bag of potatoes

• 1 lb bag of cheddar cheese

• 1 bunch of scallions

• 1 bunch curly parsley

• 1 pint heavy cream

• Salt & pepper to taste

• 1 lg can corn

• Ham steak(optional)

Instructions

1. Melt butter in pot

2. Chop onions small and cook with butter until translucent

3. Add water and broth

4. Add peeled, cut potatoes and boil for 18-20 minutes until potatoes are soft

5. Chop parsley and scallions and add them, heavy cream, S&P, and ham steak. Stir and serve with optional hot sauce.
