Chicken and Wild Rice Soup

2 lb bone in, skinless chicken breasts
1 onion, chopped
1 cup sliced carrots
1 cup wild and whole grain brown rice
2 cloves garlic, minced
2 (32-oz) cartons less sodium chicken broth
1 Tbsp red wine vinegar
2 tsp dried thyme
1/2 cup heavy cream
1/2 tsp salt
1/2 tsp pepper
Instructions
Place chicken in a 5- to 7-quart slow cooker; add onion, carrots, rice, garlic, broth, vinegar, and thyme.
Cover, and cook on LOW 7 to 8 hours or until chicken is tender.
Remove chicken from cooker; shred meat, discarding bones. Return chicken to cooker.
Stir in cream, salt, and pepper; cover, and cook 10 minutes or until thoroughly heated.
