Red Cabbage Salad

Ingredients sliced • 2 boiled beets • 1 carrot

• 1/4 small red cabbage, very thinly

• 1 small bowl pomegranate seeds • About 1 tea glass of coarsely • 1/4 bunch parsley, finely chopped

For the dressing • 1/2 tea glass olive oil • Juice of half a lemon • 1 large garlic clove, crushed • 1 teaspoon mustard • 1 teaspoon honey or 1 teaspoon granulated sugar • Salt, about 1 full teaspoon

Instructions

Thinly slice the red cabbage as finely as possible. Julienne or grate the carrot and beets. Add the pomegranate seeds, walnuts, and chopped parsley. Mix all the dressing ingredients in a bowl, pour over the salad, and toss well.

Notes

Can be made hours ahead to let the dressing soak in
