Apple filling :
4 apples (approximately 500g), peeled and sliced
100g brown sugar
1 tablespoon cinnamon
2 tablespoons water
a little lemon juice
40g butter
1 pinch of salt
2 teaspoons cornstarch mixed with 1 tablespoon water
Cake :
240g flour
2 teaspoons baking powder
1 pinch of salt
110g softened butter
120g granulated sugar
50g brown sugar
2 eggs, room temperature
110g heavy cream
2 tablespoons milk

Crispy crust :
60g cold butter, diced
100g flour
130g brown sugar
2 teaspoons cinnamon
1 pinch of salt

For the apple filling :
Instructions
in a saucepan over medium heat, combine the apples, brown sugar, cinnamon, lemon juice, water, and butter. Stir well and add the cornstarch slurry. Cook until the apples are tender. Set aside to cool.
For the crispy crust :
Combine the flour, a pinch of salt, brown sugar, and cinnamon. Add the cold butter and rub it in with your fingertips until the mixture resembles coarse crumbs.
For the cake :
In a bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs and continue beating. Then, gradually whisk in the heavy cream and milk until well combined. Finally, add the dry ingredients: flour, a pinch of salt, and baking powder. Gently mix the ingredients together. Pour the batter into a baking pan lined with parchment paper. Top with the prepared apples and sprinkle with the crumble topping. Bake at 180°C (350°F) for approximately
45-50 minutes. Once baked, let it cool completely and enjoy!
