Harissa Butter Beans (can Use Tofu)

Harissa butter beans recipe:
5 garlic cloves, minced
3 heaped tbsp harissa paste
400g finely chopped tomatoes
2 tins of 400g butter beans
Optional garnish: yogurt & parsley
Served on @tildarice whole grain basmati rice
Instructions
add the garlic to a pan with olive oil on a medium heat and cook until it softens. Add the harissa paste and cook for a further minute, stirring constantly, until it releases its fragrance.
Pour the chopped tomatoes into the pan and season with a pinch of salt and black pepper.
Bring everything to a simmer and cook for 5-6 minutes.
Add the butter beans with their juice into the pan.
Stir well then bring back to a simmer. Cook for a further 5 minutes.
Serve with Tilda wholegrain basmati rice
Yellow tofu curry:
500g firm tofu
50g yellow curry paste
1 can coconut milk
200g green beans
Serve with @tildarice wholegrain basmati rice
Optional garnish: spring onions and fresh chilli
Method:
Sauté the tofu until crispy. Add the chopped green beans and sauté for 2 mins. Add the curry paste and coconut milk to the pan and let this simmer for 10 mins on a medium heat. Serve with Tilda rice.
