Lemon Zucchini Cookies

Makes 72 - 84 cookies.

Ingrédients

2 cups flour

1 tsp. baking powder

1/2 tsp. salt

3/4 cup butter or margarine

3/4 cup sugar

1 egg, beaten or Egg Beaters

1 tsp. lemon peel, grated

1 cup zucchini, shredded

1 cup pecans or walnuts, chopped

Instructions

Stir together flour, baking powder & salt. Set aside. Cream butter and sugar until real creamy & light.

Beat in egg and peel til fluffy. At low speed, blend in flour mixture.

Stir in zucchini and nuts. Drop by teaspoonfuls on greased cookie sheet. Bake at 375° for 15-20 minutes.

Notes

These cookies freeze well (if they make it to the freezer).
