Harissa Lentil Hotpot recipe

Ingredients:
1 Onion
4 Carrots
6 Garlic Cloves
3 Celery Sticks
Handful Fresh Thyme
300g Mushrooms
90g Tomato Purée
2 x 400g Cans Lentils
2 x 400g Cans Chopped Tomatoes
2 Tosp Miso
Henderson's Relish
500ml Vegetable Stock
900g Maris Piper Potatoes
200g Cheddar
2 Tosp Harissa (| like @lamiriharissa )
Butter
Olive Oil
Salt
Black Pepper
Instructions
1. Peel the onion, carrots and garlic. Blitz coarsely along with the celery in a food processor. Remove from the processor and repeat with the mushrooms. If you don't have a food processor you can finely chop it all with a knife - whatever you do JUST DON'T GRATE IT, it will turn to mush.
2. Heat 2 tbsp oil in a large saucepan over a medium heat and add the blitzed onion, carrot, garlic and celery. Add a big pinch of salt and the thyme, then cook for 10 mins until completely softened. Add the tomato purée and cook for 2 mins hefore tinnina in the mushrooms. Cook for 5
