2 tablespoons olive oil or avocado oil
1 tablespoon cornstarch
1 1/2 pounds boneless skinless chicken breasts (cut into bite sized pieces)
3 cloves of garlic (grated or minced (about 1 teaspoon)
1/3 cup low sodium chicken broth
3 tablespoon low sodium soy sauce
3 tablespoons honey
2 teaspoons chili paste (such as sambal oelek)
1 tablespoon cornstarch
Sliced scallions and sesame seeds for garnish (optional, but recommended)
Instructions
Combine all of the ingredients for the honey garlic sauce in a measuring glass or bowl and whisk them together.
Season the chunks of chicken with salt and pepper and toss them in a tablespoon of cornstarch until they're coated.
Add the oil to large skillet and heat it over medium-high heat. When the oil is hot, add in the chicken. Spread it into a single layer and let it cook untouched for 3-4 minutes.
Flip the chicken and continue to cook it until it's golden brown and cooked through. Stir in the garlic during the last minute of cooking.
Pour the honey garlic sauce in with the chicken and continuously stir until the sauce thickens and coats all of the pieces of chicken, about 2-3 minutes. Garnish with sliced scallions and sesame seeds and serve over rice.
