15 Minute Chorizo, Halloumi, Chilli Pesto Spaghetti

Ingrédients

300g pasta - I used Spaghetti

50g chorizo, diced

150g halloumi, diced - I used light

1 onion, finely diced

3tsp garlic puree or 3 cloves

1tbs tomato purée

3tbs pesto, I used red but any will work great

100ml single cream- I used elmlea light

2tsp chilli oil (optional if you don’t like spice)

Salt and pepper to taste

Parsley to garnish

Instructions

Pop your spaghetti onto boil with plenty of salt. Fry off your chorizo until some of the oils have released then add the halloumi, cook until crispy and then remove from the pan. Next add the onion and cook until soft then add in the garlic, tomato purée and pesto. Cook for another few minutes and then add in the cream, chilli oil, cooked halloumi and chorizo and pasta. Mix well adding about 100ml of pasta water or until you get the perfect consistency. Season to taste. Serve and enjoy.
