Lemon Loaf

Ingrédients

2 cups almond flour

3 eggs or flax seeds (see notes)

1/4 cup olive oil

1/4 cup almond milk

1/4 cup maple syrup

1 tbsp lemon zest

2 tbsp lemon juice

1 tsp baking powder

1 tsp vanilla extract

Topping: 1 can of coconut whipping cream, 2 tbsp honey or maple syrup, 1 tsp vanilla extract

Instructions

In a medium bowl, mix together all wet ingredients. Add in the dry ingredients and mix

again.

Pour batter into a parchment-lined loaf pan.

Bake at 350°F for 40-45 minutes. Let cool.

Mix topping ingredients together in a small bowl.

Spoon whipped topping on top of the cooled loaf. Enjoy!

Notes: to make flax eggs, mix together 3 tbsp ground flaxseed with 8 tbsp water in a small bowl. Let sit for 5 minutes to gel.
