Bruschetta Chicken

1 cup water
1 (8-ounce) boneless, skinless chicken breast
⅛ teaspoon salt
⅛ teaspoon ground black pepper
¼ teaspoon Italian seasoning
2 (1-ounce) slices fresh mozzarella cheese
Bruschetta
⅓ cup diced tomatoes
½ tablespoon olive oil
¼ teaspoon balsamic glaze
¼ teaspoon minced garlic
1 teaspoon chopped fresh basil
⅛ teaspoon crushed red pepper flakes
⅛ teaspoon ground black pepper
⅛ teaspoon salt

Pour water into Instant Pot" and add the trivet.
Place chicken on the trivet, then season with salt, black pepper, and Italian seasoning.
Close the lid; turn the knob to Sealing.
Press Manual or Pressure Cook button and adjust time to 15 minutes.
While the chicken is cooking, prepare Brus- chetta. In a small bowl, mix together all Bruschetta ingredients. Let chill in refrigera- tor until ready to serve.
When the timer beeps, allow 5 minutes to naturally release the pressure, then remove the lid. Place mozzarella slices on top of chicken and replace the lid. Let sit 5 minutes with lid on to allow the cheese to melt slightly.
7 Remove to a serving plate and top with Bruschetta. Serve immediately.
