Buffalo Chicken Skewers

1 1/2 pounds boneless skinless chicken breasts
1/3 cup buffalo sauce
2 tablespoon honey
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and freshly ground black pepper to taste
1/2 of a large avocado (peeled and cut into chunks)
1/2 cup plain Greek yogurt
2 tablespoons mayo
1 tablespoon fresh lemon juice
1/4 cup cilantro (roughly chopped)
1 tablespoon chopped fresh dill
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and freshly ground black pepper to taste
Instructions
Season the chicken with salt and pepper and add it to a resealable bag. Combine the buffalo sauce, honey, and dried spices to a bowl and whisk them together. Pour marinade in with the chicken, seal the bag, and massage the marinade into the chicken. Refrigerate for 1-3 hours.
While the chicken is marinating, make the avocado ranch dressing. Add all of the ingredients to the blender and blend until smooth. Scrape down the sides of the blender to ensure everything is well combined. If the dressing is too thick add in a couple tablespoons of water or milk. Taste for seasoning and adjust as needed with more salt or lemon juice.
Preheat grill to 425° F. Thread the chicken onto metal or soaked wooden skewers. Clean and oil the grill grates then places the skewers on them. Grill for 6-7 minutes then flip them over and grill until the internal temperature is 165° F. If desired, combine extra buffalo sauce and honey and brush the chicken skewers with it during the last minute or two of cooking.
Remove the skewers from the grill and serve with the avocado ranch dressing.
