Maple Cream Cheese Carrot Cake

Ingrédients

½ cup plain yogurt (full fat)

3 eggs

1 tbsp vanilla extract

1/2 cup white sugar, 1/2 cup brown sugar

3 teaspoons baking powder

1 tsp of each: cinnamon powder, nutmeg, ginger

1½ cups all-purpose flour

½ cup olive oil

2 cups shredded carrots

Cream Cheese Icing:

4 oz cream cheese at room temp

1/2 cup maple syrup

1/4 cup heavy cream

Instructions

Preheat your oven to 350°F

Blend all of your ingredients

Add a sheet of parchment paper (or coat with butter) to your loaf pan and pour in the mix!

Bake for about 1 hour or until a toothpick comes out clean

Top with cream cheese icing and enjoy!
