Mojito

Mint Simple Syrup
¾ cup sugar
¾ cup water
6 sprigs fresh mint leaves

1 ounce mint simple syrup
2 ounces white rum
¾ ounce lime juice
4 ounces seltzer, chilled
Mint sprigs for garnishing

Create mint simple syrup: Combine ¾ cup sugar and ¾ cup water in small saucepan. Bring to boil over high heat and stir until sugar is dissolved, about 1 minute. Off heat, add 6 sprigs of mint. Let cool completely, about 30 minutes. Discard mint. Simple syrup recipe will make 6 oz (¾ cup), or enough for 6 mojitos.
Add 1 oz. simple syrup, rum, and lime juice to base of cocktail shaker, then fill shaker with ice. Shake mixture until just combined and chilled, about 5 seconds.
Double-strain cocktail into chilled collins glass half-filled with ice. Add seltzer and, using bar spoon, gently lift rum mixture from bottom of glass to top to combine. Top with additional ice and garnish with mint sprig. Serve.
