Pulled Pork (Carnitas-style)

Pork shoulder (1.8-2.4kg)

500-750ml Coca Cola (original, not diet / zero)

2 oranges (wax removed)

2 Bay leaves

1 stock cube

Spice rub

1 tsp dried oregano

2 tsp ground cumin

1 tsp dried thyme

1 tsp smoked paprika

1 tsp garlic powder

1 tsp ground cinnamon

1 tbsp brown sugar

Large pinch of salt

Ohjeet

  1. Mix spice mix together.

  2. If using slow cooker, trim skin and some excess fat from the outside of the shoulder.

  3. Place the shoulder in slow cooker / casserole pot and apply spice rub all over the joint.

  4. Cut oranges into quadrants and squeeze the juice into the pot, then throw quadrants around the pork. Add cola, bay leaves and crumble stock cube into the liquid.

  5. If using slow cooker, cook the pork on low for 8-10 hours. If using oven, cook pork on 130c (fan) for 6-8 hours.

  6. When tender (meat should pull away easily with a fork), set shoulder aside and remove orange, bay leaves from the liquid.

  7. Boil liquid down until it reaches a glaze-like consistency. While you wait, shred the pork and discard any excess fat.

  8. Combine shredded meat with condensed liquid and toss.
