Creamy Orzo Chicken Delight in One Skillet

Ingredients:

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 tablespoon olive oil

1 small onion, chopped

2 cloves garlic, minced

1 cup orzo pasta

4 cups chicken broth

1 cup heavy cream

1 cup spinach, chopped

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Directions:

In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until translucent.

Add the minced garlic and cook for an additional minute until fragrant.

Season the chicken pieces with salt and pepper, then add them to the skillet. Cook for 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.

Stir in the orzo pasta and pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to a simmer.

Cover the skillet and cook for about 10-12 minutes, or until the orzo is tender and has absorbed most of the liquid.

Once the orzo is cooked, stir in the heavy cream, chopped spinach, and grated Parmesan cheese. Cook for an additional 2-3 minutes until the spinach is wilted and the sauce is creamy.

Taste and adjust seasoning with salt and pepper as needed.

Garnish with fresh parsley before serving.
