Spicy Salmon & Cucumber Handrolls! Better Than Restaurant St

For the salmon
1 lb salmon filet
Olive oil
Salt
Pepper
1/2 cup finely chopped cilantro
1 cup thinly sliced chopped mini cucumbers
3 tbsp mayonnaise
1 tbsp chili garlic sauce or sriracha
1/2 tbsp tamari soy sauce
For the spicy mayo:
2 tbsp mayonnaise
1/2 tbsp chili garlic sauce or sriracha
Juice of 1/2 lime
1 tsp tamari soy sauce
For assembling:
1 1/2 cups cooked sushi rice, cooked according to package
1 package of Nori sheets, cut into 3 inch tall strips
Sesame seeds
1 ripe avocado, thinly sliced

Preheat the oven to 275. Line a sheet pan with parchment paper and set aside.
Add the salmon to the sheet pan then drizzle with the olive oil and season with salt and pepper. Place the salmon in the oven for 30 minutes.
While the salmon roasts, make the spicy mayonnaise. Add the mayonnaise, chili garlic, lime juice and tamari to a small bowl. Mix to combine.
Make the salmon mixture. Flake the salmon, then remove the skin. Add the salmon to a large bowl with the cilantro, cucumbers, mayonnaise, chili garlic and tamari soy sauce. Mix everything together.
Assemble the rolls. Add about 2 tablespoons of the sushi rice at an angle to the left side of the nori sheet, top with a couple tablespoons of the salmon mixture, then a slice of avocado.
Next, fold the bottom corner up towards the middle, then begin to roll the roll, picking it up in the process to finish wrapping it all the way around. You can put a small piece of the rice to hold the seaweed closed.
Drizzle with the mayo and sprinkle with the sesame seeds.
