Smash Dumplings

Dipping sauce:
2 Tbsp dark soy sauce
1 Tbsp Tbsp rice wine vinegar
1 Tbsp sesame Oil
1 Tbsp of brown sugar
2 tsp sesame seeds
Pork Filling:
500g pork mince
1 crushed clove of garlic
2 Tbsp grated Ginger
1 cup finely shredded Cabbage
3 spring onions finely chopped
1 Egg
1/2 tsp white pepper
1 Tbsp Sesame Oil
1 Tbsp Soy Sauce
1 Tbsp Cornstarch mixed into a slurry with 1.5 tablespoons of water.
30 Wonton or gyoza wrappers

Dipping sauce:
Mix together all the ingredients for the dumpling sauce with sesame seeds last and set aside.
For the Dumplings:
Make the filling combining the minced pork, garlic, ginger, cabbage, spring onions/ scallions, egg, pepper, sesame oil, and soy sauce to a bowl and mix.
In a separate bowl combine the cornstarch with 1.5 Tbsp water and then pour it into the meat mixture and combine.
Place 1 heaped teaspoon of the meat mixture in the middle of each wrapper and spread to the edges.
Preheat a large pan over medium heat and add 1 Tbsp oil (per batch); working in batches, place the dumplings meat side down on the pan, press down with a spatula to flatten the meat and cook 2-3
Flip and cook for an additional 2-3 minutes, and done!
Topping:
Shredded lettuce or cabbage, julienne carrots and the sauce.
