100g starter

350g water

5-10g salt

2-4g (increase to 4-6g) ube flavoring

Honey (unknown amount)

500g bread flour

Try 200g next time White Chocolate to your liking

Mix starter and water until well combined. Stir in the salt and ube flavoring. Add in the flour until a shaggy dough forms.

Cover for 1 hour. First round of stretch and folds the lady does 25-30. Cover and rest 30-60 minutes. She does between 1-4 of these folds depending on how she is feeling and the sourdough itself.

Let your sourdough rest at least 30 minutes after the last stretch and fold. Go to a floured work surface and spread the sourdough out. Put most of the white chocolate on 2/3 of the surface and fold the last 1/3 without chocolate on top, then then the other side and finally put the rest of the white chocolate on top and roll together. Or add white chocolate on top and start rolling the edges towards the center of the dough. Once in the middle start to shape and put in a banneton.

Preheat oven to 460°F. She puts the Dutch oven in there to preheat as well. We do not normally.

Bake a full loaf for 40 minutes lid on and 5-10 lid off. For a half loaf bake 30 minutes lid on and 5 lid off.
