2 x 250g pkt cream cheese, at room temperature

150g pkt goat’s cheese

1 loaf white bread, unsliced

2 x 250g pkt Tassie Smoked Atlantic Salmon

2 Lebanese cucumbers, peeled into ribbons

1 large avocado, halved, thickly sliced

2 large fresh dill sprigs

2 qukes (baby cucumbers), peeled into ribbons

Fresh dill sprigs, extra

Salmon roe, to decorate (optional)

Step 1

Use electric beaters to beat the cream cheese and goat’s cheese in a bowl until smooth and creamy. Spoon 1/2 cup of the mixture into a piping bag fitted with a 5mm fluted nozzle and set aside.

Step 2

Use a large serrated knife to trim the brown crust off 1 long side of the bread loaf. Cut the loaf lengthways into four 1.5cm-thick slices. Remove the remaining crusts from each bread slice.

Step 3

Place a large piece of baking paper on the kitchen bench. Place the bread slices in rows, slightly overlapping on the longest sides. Use a rolling pin to roll over the slices to make a 25 x 30cm rectangle and seal the overlapping sides. Spread 1 cup of the remaining cream cheese mixture over the bread to cover.

Step 4

Reserve 2 slices of salmon. Top the bread rectangle with the remaining smoked salmon in a single layer. Top with the Lebanese cucumber ribbons, slightly overlapping lengthways. Arrange 3 rows of avocado, evenly spaced apart, and top with the dill. Using the paper and starting from a long side, roll up to form a log and transfer to a serving plate.

Step 5

Spread the remaining cream cheese mixture over the outside of the log to cover. Pipe small stars of the reserved cream cheese mixture on top of the log.
