2 tsp paprika
2 tsp pepper
2 tsp Italian seasoning
3 cups brown rice
6 Eggs
1 yellow onion
3 Green onion
1 orange bell pepper
1/2 bunch cilantro
1 Garlic clove

Chicken brine for 1 hour

Rice
for 3(1) cups of brown rice, bring 7 1/2(2 1/2) cups of water to boil in a 2 quart heavy saucepan
stir in 3 cups of rice
Cover, reduce heat and simmer for 120 mins or until all water is absorbed
While rice is cooking: dice yellow and green onion, bell pepper, cilantro, and garlic
heat sauce pan/skillet to medium heat with 1 tbsp butter
Once butter is melted, add all items from step 2
Sauté until soft
scramble 6 eggs in the sautéed veggies
Add sautéed items to the still cooking rice
after all water is absorbed in the rice, fluff with a fork
Chicken
mix all spices together
heat skillet to medium heat with tbsp of butter
take chicken thighs and spread them out and cut in half
poke holes into chicken using fork
Rub spices onto all pieces of chicken thigh
place chicken thigh pieces into skillet and cook each side for 7.5 minutes, repeat until all chicken pieces are cooked
Plating
Plate 1 1/2 cup rice and 3 chicken thigh haves for 1 serving
Put preferred sauce over plate for extra flavor
