Greek Chicken Bowls

For the Chicken:

1 ¼ lb chicken breasts, pounded thin

¼ cup olive oil, 2 tbsp honey, 2 tbsp lemon juice, 1 tbsp lemon zest

1 ½ tsp dried oregano, 1 ½ tsp dried basil, 1 tsp salt, 1 tsp garlic powder

Optional: ½ tsp red pepper flakes

For the Bowls:

4 cups romaine lettuce, 2 cups cherry tomatoes, 2 cups cucumber, 2 cups cooked rice

1 cup red onion, ½ cup feta (optional)

Tzatziki Sauce:

1 cup Greek yogurt, ½ cup grated cucumber, 1 tbsp fresh dill

1 tbsp olive oil, 1 tbsp lemon juice, 1 tsp minced garlic

Marinate Chicken: Mix marinade ingredients. Let chicken sit for 30+ mins.

Make Tzatziki: Mix all sauce ingredients; set aside.

Cook Chicken: Air fry at 380°F (7-8 mins/side) or pan-fry until golden and cooked through (165°F).

Assemble Bowls: Start with rice, add veggies, chicken, and tzatziki. Optional: drizzle olive oil or lemon juice.
