Terrence Bakes Cheesy Chive Biscuits (Modified)

5 1/3 cup (720g) all purpose flour
4 tbsp baking powder
4 tbsp sugar
1 tbsp kosher salt
2 tsp baking soda
4 sticks (452g) grated frozen butter
2 cup (520g) buttermilk
8 tbsp chopped chives
8oz cheddar (sharp white cheddar Coastal Brand)
6oz gruyere

Mix together all dry ingredients. Add in grated butter to coat and mix until pea sized pieces. Add in the grated cheese and chives. Mix until incorporated. Make sure everything is still cold and then add in the buttermilk until a shaggy dough is formed.
Dump dough onto a floured work surface. Gently roll dough into a rectangle and cut into thirds. Place the thirds on top of each other and press done and roll into a rectangle. Do this about 3-4 times. If your dough is still cold, roll into a rectangle and cut into 24 even pieces (12 if this is a half recipe etc).
Brush tops with extra buttermilk before baking.
Bake at 425°F for around 18 minutes. (Around 23min from frozen).
