Mediterranean Style Zucchini

3-4 zucchini

Salt and pepper for seasoning

1/2 cup of tzatziki

1/4 cup of olive oil + 1/4 cup for frying zucchini

1/3 cup of fresh parsley (finely chopped)

1 small shallot (finely chipped)

1 tsp of lemon juice

Slice zucchini in half vertically and season with salt. Let sit for 10-15 minutes to draw out moisture.

Pat zucchini dry with a paper towel or cloth.

Using a sharp knife, slice diagonal lines into the zucchini.

Season with salt and pepper.

Heat oil in a large pan and fry zucchini on medium-high heat for 3-5 minutes per side or until golden.

Transfer zucchini to a baking dish.

Bake in a 400 F oven for 10-15 minutes until fully cooked.

In the meantime, combine olive oil, parsley, shallot, lemon juice in a small bowl. Season with salt and pepper. Set aside.

When serving spread tzatziki onto plate. Add zucchini and top with parsley mixture.
