Flavorful Chicken Fajitas Cooked to Perfection in a Slow Cooker

Ingredients:

2 pounds boneless, skinless chicken breasts

1 red bell pepper, sliced

1 green bell pepper, sliced

1 yellow bell pepper, sliced

1 onion, sliced

3 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon oregano

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for heat)

1/4 cup chicken broth

1 lime, juiced

Cooked rice or quinoa, for serving

Directions:

Place the chicken breasts in the bottom of the slow cooker.

Add the sliced bell peppers, onion, and minced garlic on top of the chicken.

In a small bowl, mix together the chili powder, cumin, paprika, oregano, salt, black pepper, and cayenne pepper. Sprinkle the spice mixture evenly over the chicken and vegetables.

Pour the chicken broth and lime juice over the top.

Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.

Once cooked, shred the chicken directly in the slow cooker using two forks and stir to combine with the vegetables and juices.

Serve the chicken fajita mixture over cooked rice or quinoa, and garnish with fresh cilantro. Add sour cream and shredded cheese if desired.
