2.5g Juniper berries

2g Green peppercorns

1.5g Star anise

4 Cloves

1 Vanilla bean

400ml Water

50ml Tamarind concentrate 200ml Pineapple syrup

150ml Lime juice

200ml Coconut milk

Using a mortar and pestle, crack the juniper berries, green peppercorns, star anise, and cloves. Slice the vanilla bean in half and scrape out the seeds. Add the cracked spices and vanilla seeds to a bowl with 400ml of hot water and 50ml of tamarind concentrate. Stir and let it infuse until it reaches room temperature. In a separate container, mix the pineapple syrup and lime juice.

Combine the brewed infusion and pineapple-lime mixture with 200ml of coconut milk. Filter the mixture through a coffee filter. Bottle up the base and enjoy in your zero, low, or full-proof cocktail.
