Salmon with Cranberry-brie Crust & Pistachio Sprinkle

4 salmon fillets

Cranberry-Brie Crust:

1/2 cup cranberry sauce

4 oz brie cheese, finely chopped

1/3 cup breadcrumbs

Topping:

1/4 cup pistachios, chopped

Preheat oven to 400°F / 200°C. Place salmon on a lined baking dish and brush with olive oil, season lightly.

Mix cranberry sauce, brie, and breadcrumbs. Spoon mixture over each fillet.

Bake 12–15 minutes until salmon flakes and topping is bubbly.

Sprinkle with pistachios and serve warm.
