Fisherman's Pie

700g White Fish
570ml Milk
110g Butter
50g Plain Flour
110g Peeled Prawns
2 Hard-Boild Eggs, roughly chopped
15g Capers, drained
45g Fresh Parsley, chopped
15ml Lemon Juice
Salt and Pepper, to taste
Topping:
900g Potatoes, boiled
50g Butter
60ml Milk
A pinch of Nutmeg, grated
25g Cheddar, grated

Pre-heat the oven to 400F/200C.
Start by arranging the fish in a baking tin and seasoning well with salt and pepper. Then, pour over half of the milk and dot with 25g of the butter in flecks, and bake in the oven for 15-20 minutes.
Pour the liquid into a container to reserve. Remove the skin from the fish and flake it into large pieces.
To make the sauce: melt the remaining 75g of butter in a saucepan, then stir in the flour and gradually add the reserved liquid, stirring well after each addition. When all the liquid is in, finish off the sauce by slowly adding the remaining milk and seasoning with salt and pepper.
Next, add the fish into the sauce along with the prawns, eggs, capers and parsley. Taste for seasoning at this stage, and stir in the lemon juice. Pour the mixture into a well-buttered baking dish.
Now, mash the cooked potatoes with butter and milk, then add salt, pepper and nutmeg then spread the mixture evenly over the fish. Smooth the surface of the potato, then pattern it. Lastly, sprinkle cheese over the top and bake on a high shelf in the oven for 30-40 minutes, or until heated through and browned.
