Donut

  • 10 oz Room Temperature Milk

  • 40g Sugar

  • 2tsp Instant Dry Yeast

  • 2 Medium Sized Eggs

  • 400g Bread Flour

  • 2tbsp Milk Powder (Can be omitted)

  • 3g Salt

  • 2tbsp Butter (softened)

Chocolate Glaze

  • 6.8 oz Cream

  • 200g Dark Chocolate Chips

  • 1tbsp Butter

Plain Glaze

  • 350g Powdered Sugar

  • 1/2 Cup Warm Milk

  • 1/2tsp Vanilla

Make Dough

  1. Mix Milk, Sugar, and Instant Dry Yeast in bowl until dissolved.

  2. Crack two medium sized Eggs into bowl and mix.

  3. Sift Flour into separate Bowl. Add Milk Powder and Salt to flour.

  4. Pour the wet mixture into the dry mixture.

  5. Start kneading on low speed, increasing to medium speed as dough comes together. Add 1-2 tablespoons of milk or flour to improve dough texture. Knead for 5-6 minutes.

  6. Add softened butter to dough mixture. Continue kneading for 15 minutes total, keep the dough cool while kneading.

  7. Let dough rest for 10 minutes before shaping.

Shaping Dough

  1. Separate dough into 30 - 50g portions.

  2. Shape dough into balls by rolling.

  3. Sprinkle flour over dough balls, cover, and allow to rest for 15-20 minutes.

  4. Flour the dough balls and press down into ring to make into a flat disk.

  5. Poke finger into center of dough to make hole and gently spread into donut shape.

  6. Place donuts onto baking paper to allow 30min to 2 hours to rise. Do poke test to ensure donuts are ready.

Frying Dough

  1. Heat oil to 300-325F.

  2. Place donut into oil and allow it to cook for 2-3 minutes before flipping and cooking another 2-3 minutes.

  3. Place on paper towel to dry the dough.

Chocolate Glaze

  1. Heat cream on low heat stove until gently simmering.

  2. Remove from heat and add dark chocolate. Whisk until melted.

  3. Place mixture back on head and continute to mix until glossy.

  4. Add butter and mix until melted in.

  5. Strain glaze to remove lumps.

  6. Dip completely cool donuts into chocolate to coat.

Plain Glaze

  1. Heat milk on stove until warm.

  2. Sift powdered sugar into milk. Add Vanilla.

  3. Whisk glaze until smooth.

  4. Place donuts into glaze and move until fully covered.
