Homemade Bagels

360g flour (about 3 cups)
215g water (about ⅞ cup)
1 tsp yeast
1 tbsp sugar
1 tsp salt

In a bowl, mix water, yeast, and sugar. Add the flour and mix, then add the salt and fold the dough several times until smooth. Cover and let rise for 2 hours.
On a lightly floured surface, divide the dough into 5 pieces. Roll each piece into a ball, cover, and let rest for 10 minutes. Make a hole in the center of each ball to form bagels, place them on parchment paper, cover, and let rest for 15 minutes.
Bring a pot of water to a gentle boil. Add 1 tsp sugar and 1 tsp baking soda. Boil each bagel for about 30 seconds per side, then transfer to a parchment-lined baking tray.
Brush with egg wash and sprinkle with everything bagel seasoning. Bake at 420°F (215°C) for 15–20 minutes.
