Cauliflower in Cheese Puff

1 large cauliflower

1½ cups medium white sauce

¾ cup grated Cheddar cheese

4 eggs, separated

1 teaspoon sugar

Salt and pepper

Trim cauliflower and break into flowerets.

Cook in boiling salted water until barely tender. Put in buttered shallow baking dish; reserve a few flowerets for garnish.

Make white sauce; add cheese. Beat egg yolks, sugar, salt and pepper to taste, and add to white sauce. Beat egg whites until stiff and fold into sauce. Pour over cauliflowerets. Bake in preheated moderate oven (350°F.) for 20 minutes, or until sauce is firm. Garnish with remaining flowerets.
