Pack of corn tortillas

Shredded Monterey Jack.

Chopped up chicken- Costco rotisserie works great take all the meat off the bones

Jar or can of enchilada sauce

Chopped onion

Ohjeet

Heat oven to 400°

Spray the bottom of your pan with Pam

6 tortillas layered in 9 x 13 pan- overlap a little and up the sides

Thinly spread a third of your jar of enchilada sauce

Cover that layer in chicken

Cover that with cheese.

Repeat that three times. Make sure your top layer is completely covered in enchilada sauce so that doesn’t dry out.

Cook at 400° for 25 to 30 minutes.
