Grilled Smoky Portobello Mushrooms & Creamy Garlic Sauce

Ingredientes

If you are a fan of mushrooms, you are definitely going to like this recipe. These are a great grilling season vegetarian meal or side dish. This is for 4 large portobello mushrooms.

Marinade Ingredients ~

3 cloves garlic, minced

2 tbsp balsamic vinegar

1 tsp olive oil

3/4 tsp smoked paprika

2 tsp Worcestershire sauce

2 tsp lemon juice

1 tbsp white wine

Salt & Pepper

Creamy Garlic Sauce ~

1 tsp oil

1 medium onion, finely chopped

5 cloves garlic, minced

1/4 cup raw cashews (soak in hot water for 15 minutes)

1 tbsp flour

1 ½ cups water

1 tbsp lemon juice

1 tbsp olive oil

1-2 tbsp white wine

1/2 tsp salt

Chopped fresh basil and black pepper, for garnish

Instrucciones

In a shallow dish, combine all marinade ingredients.

Place the portobello mushrooms into the dish and let them sit for 10-15 minutes.

Heat a grill or heavy-bottomed pan over medium heat and lightly oil the surface. Grill 5 minutes per side OR:

Place the marinated mushrooms in the pan, partially cover, and cook for 3-4 minutes per side.

For thicker mushrooms, transfer them to a 400°F oven and bake for 15 minutes until a knife slides through easily.

Sauce ~

In a skillet, heat the oil over medium heat. Add the onion, garlic, and a pinch of salt, cooking until translucent. Transfer half of the mixture to a blender.

Add the cashews, water, lemon juice, olive oil, white wine, and salt. Blend until smooth.

Return the blended mixture to the skillet and cook over medium heat until the sauce thickens. Adjust salt and seasoning as needed.

Serve:

Drizzle the creamy garlic sauce generously over the grilled mushrooms.

Garnish with fresh basil and a sprinkle of black pepper for added flavor.
