Broccoli Salsa Verde

Ingredientes

2 broccoli stalks/stems

6-7 tomatillos

3-4 serranos

1/2 a bushel cilantro

2 tbsp neutral oil

7-8 garlic cloves

1/2 an onion

Instrucciones

Remove the florets from the stalks and save them for something else. Lightly peel the stalks and dice them up.

Fry your tomatillos, serranos, and stalks in 1 tbsp oil for a few mins over medium heat. Add your onions & garlic. Continue to cook everything until veggies have a nice sear.

Add 1 c of water, cover, reduce heat to medium low, and cook for about 10 mins.

Add everything but the tomatillos to your blender with a little bit of the water & 1 tsp salt. Blend until almost smooth.

Add in your tomatillos, cilantro, and continue to blend. Slowly drizzle in 1 tbsp oil. Now just blend until smooth.
