Sloppy Joe Potato Skillet

1 tablespoon olive oil
1 pound ground beef
1 small onion, diced
1 green bell pepper, diced
2 medium potatoes, peeled and diced small
2 cloves garlic, minced
1 tablespoon tomato paste
1/2 cup ketchup
1 tablespoon Worcestershire sauce
1 teaspoon mustard
1 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup water
2 green onions, sliced
1 tablespoon chopped parsley, optional
Instrucciones
Heat olive oil in a large skillet over medium heat. Add the diced potatoes and cook for 10 to 12 minutes, stirring often, until golden and nearly tender. Remove and set aside.
In the same skillet, add ground beef, onion, and green bell pepper. Cook for 6 to 8 minutes until the beef is browned and the vegetables are softened. Drain excess grease if needed.
Stir in garlic, tomato paste, ketchup, Worcestershire sauce, mustard, chili powder, paprika, salt, black pepper, and water. Mix well and cook for 2 minutes.
Return the potatoes to the skillet and stir until everything is well coated. Cook for 4 to 5 more minutes until the potatoes are fully tender and heated through.
Sprinkle with green onions and parsley if using. Serve hot straight from the skillet. Leftovers can be stored in the fridge for up to 3 days.
