Instrucciones
Render down sausage, remove from pan when seared.
Season thighs with s&p, cook down in pan with sausage fat.
Remove chicekn from pan, put with sausage.
Over low heat in a large soup pot, combine equal parts vegetable oil and flour, cook until deep brown in color.
Add in onion, bell pepper, celery, and garlic. Cook through.
Add meats back in, plus drippings.
Add stock, bay leaf, and spices. Bring to a boil, reduce to a simmer for 30 minutes.
Throw in chopped parsley and thickener (either okra or gumbo file)
Plate with rice.
