Sticky Date Chia Seed Pudding, My Go to Breakfast Atm
Recipe (makes 4 serves

80g Medjool dates
400g yogurt - I use vanilla or salted caramel from @yoproau
200g plain kefir (completely optional!!! Can sub for any milk) - I just love the tanginess and gut health benefits of kefir
Dash of salt
4 heaped tbsp chia seeds (80g) - 1 tbsp per bowl
Topping:
200g yogurt (divided onto each serve)
Toffee sauce:
70g almond butter
30g honey or maple syrup
1-2 tbsp milk (I use soy)
Microwave for 30 seconds
Instrucciones
Soak medjool dates for 5 mins in hot water, drain majority of the water (I like to leave some in the mix)
Blend with yogurt, kefir and salt
Evenly divide into 4 bowls
Add 1 heaped tbsp chia seeds into each bowl, mix and refrigerate for 1-2 hours minimum, I like overnight
Top with 50g yogurt per bowl, and evenly divide the “toffee” sauce on top
Sprinkle with a dash of salt and keep refrigerated for 4-5 days
