Soft Shell Crab Sandwich

Breading
2 cups flour
1 tbsp smoked paprika
1 tbsp cayenne
1 tbsp black pepper
1 tbsp salt
Egg Wash
1-2 eggs beaten
1-2 tbsp milk or buttermilk
Additional
2-4 soft shell crabs
Vegetable oil
Instrucciones
Heat 1-2 inches of oil in a saucier, braising pan, or Dutch oven
Coat crab in dry breading mix. Dredge in egg wash. Dry bread crabs a second time.
Place crabs in refrigerator for 10-15 minutes.
Gently place crab in oil. Cover with splatter screen. Cook 2-3 minutes per side or until bubbles begin to slow.
Temperature: 140 F
Place on brioche bun with tartar sauce, lettuce, and tomato.
Notas
Salt lightly after removing from oil.
Squeeze lemon & Parsley to garnish (Optional)
