Peanut Tofu Noodles

Creamy, savory, and seriously satisfying.

Whole wheat noodles tossed in a rich peanut sauce with crispy tofu and fresh vegetables — simple ingredients, bold flavor, and a bowl that actually keeps you full.

Ingredients (1 serving)

For the noodles

120 g whole wheat noodles

For the tofu

200 g firm tofu, pressed and cubed

1 tsp neutral oil

Salt & black pepper

For the vegetables

100 g bell pepper, sliced

100 g carrots, julienned

1 spring onion, sliced

For the peanut sauce

2 tbsp natural peanut butter

1 tbsp soy sauce

1 tsp lime juice

1 tsp grated ginger

1 garlic clove, minced

100–120 ml warm water

Optional

Chili flakes

Sesame seeds

Instrucciones

Cook whole wheat noodles in salted water according to package instructions, drain

Heat oil in a pan and fry tofu 5–6 min until golden and crispy

In the same pan sauté bell pepper and carrots 2–3 min until slightly tender

Whisk peanut butter, soy sauce, lime juice, ginger, garlic and warm water until smooth

Add noodles to the pan and pour peanut sauce over

Toss well until evenly coated and heated through

Top with crispy tofu and spring onion

Finish with optional chili flakes or sesame seeds
