Big Mac Burger Bowl

Ingredients (makes 3 servings)
300g/2 ½ cups frozen diced hashbrowns
Cooking spray or oil (I use avocado oil spray)
1 ½ tsp each onion powder, garlic powder, smoked paprika and salt, divided
454g/1 lb extra lean ground beef
1 tsp freshly cracked black pepper
300g/5 cups iceberg lettuce, finely chopped
90g/1 cup low fat cheddar, shredded
150g/¾ cup dill pickles, chopped
90g/¾ cup white onion, finely diced
Low Cal Mac Sauce
75g/⅓ cup low fat mayonnaise (I used light Miracle Whip)
90g/⅓ cup plus 2 tbsp non-fat Greek yogurt
12g/1 tbsp yellow mustard
30g/2 tbsp sweet relish
50g/3 tbsp pickle juice or white vinegar
½ tsp each onion powder, garlic powder, smoked paprika and salt
Dash of MSG, optional
Instrucciones
Preheat oven to 400℉ and line a large baking sheet with parchment paper
Toss the potatoes with a little cooking spray and ½ tsp onion powder, garlic powder, smoked paprika and salt
Bake for 22-25 mins or until cooked through and crispy
Meanwhile, heat a large skillet over medium high heat (do not add oil)
Add the ground beef and break up with a spatula
Once it starts to release fat, scrape the bottom of the pan, drain excess oil and add the remaining tsp of onion powder, garlic powder, smoked paprika, salt and black pepper, along with about 2-3 tbsp of water so it doesn't get dry
Cook for 8-10 mins until cooked through
To make the Mac Sauce, mix all ingredients until combined
Assemble the bowls with the potatoes, beef, lettuce, cheddar cheese, pickles, onions and top with Mac Sauce
