Hazelnut Cookie Sandwich

Ingredients:
Cookie Dough:
140g butter
130g brown sugar
90g white sugar
1 egg
245g flour
3g baking soda
200g dark or milk chocolate chunks
1 pinch of fleur de sel
Hazelnut Chocolate Inlay:
300g hazelnut spread of your choice
120g almond paste
25g unsweetened cocoa powder
Instrucciones
Preparation:
Start by mixing the sugars with the melted butter. Add the egg.
Continue with the flour and baking soda. Finish with the chocolate pieces. Mix one last time. Form 55g cookie balls.
Let the dough rest in a cool place for a few hours, or even overnight, ideally.
The next day or a few hours later, remove the cookies from the refrigerator 40 minutes before baking.
Bake your cookies for 10 minutes at 175°C in a preheated oven. Add a pinch of fleur de sel and let cool.
Meanwhile, mix the cream with the almond paste and then the cocoa powder. The mixture should be very smooth.
Turn 7 of your cookies over, smooth side facing you, fill the center with your hazelnut mixture, and close your sandwich with another cookie, pressing lightly so the mixture reaches the edge. And that's it! Enjoy! 🤤
