Hatch Sourdough Bread

Ingredientes

250 g water

150 g active sourdough starter

25 g olive oil

500 g bread flour

10 g salt

Instrucciones

1. Put all ingredients into bread machine in the order they are listed.

2. Autolyse(Optional): Roughly Mix the ingredients together by hand or by using the dough option on the machine for no more than 2 minutes. If using the machine to mix, pull the plug after 2 min. The dough should look dry, rough and shaggy. Then allow the ingredients to sit in the bread machine pan for 30 minutes to an hour. (I allow it to mix for a min or two based on the look of the dough then pull the plug. Then I plug it back in and set up the artisinal dough cycle with a 30 min to an hour delay so its hands off)

3. Bread Machine Mix, Kneed, & Rise: On the bread machine select option 7 (Artisanal Dough). This will automatically Mix, Kneed, & Rise the Dough. This cycle takes about 5 Hours but it should fully rise the dough.

4. Shape: Remove the dough from the machine pan and put on a lightly floured surface. If you want two smaller loafs, cut the dough in half. Shape the dough how you want it. If you want a round loaf: Starting at the top, fold the dough over toward the center. Give it a slight turn, and then fold over the next section of dough. Repeat until you have come full circle.

5. Second Rise: Use a large cast iron dutch oven or similar pan. This will also be the pan you bake in. Line pan with parchment paper. Place dough in the middle and set aside to rise again for 30 min to an hour.

6. Pre-Heat and Score: Pre-heat the oven to 450F. Score the Dough with a knife or razerblade.

7. Bake: Put the lid on the pot and reduce the oven temperature to 400F. Bake on the center rack for 20 min. After 20 min, remove the lid of the pot and bake uncovered for 40 more min.

8. Cool: Put the finished loaf on a wire rack for 30 min to an hour to cool before slicing.
