Pizza Oven Naan

165 ml Water (165 g)

110 ml Warm Milk (114 g)

1 Egg

2 T Sugar (25g)

1/2 t Kosher Salt

1/2 t Baking Powder

465g All Purpose Flour

Instrucciones

Combine wet ingredients (milk, water, egg) plus salt and sugar in the mixing bowl. Stir to combine.

Combine the remaining dry ingredients (in a separate bowl) and add to the wet ingredients in the mixing bowl.

Mix in the stand mixer using a dough hook until it comes together.

Spray a cookie sheet with cooking spray. Portion the dough into 95g balls, should make about 9. Arrange on the baking sheet and cover so they don't dry out. Leave out at room temperature for 30-60 minutes. (They won't rise much since there's no yeast, but we want the flour to fully hydrate).

While resting, preheat the pizza oven.

After resting, roll out the dough balls and cook. Method to follow. If making garlic naan, you can add some garlic and cilantro just before it goes into the oven.

The method:

1. take a large cutting board, or clean countertop, and spray with a thin layer of cooking spray (or use canola oil and spread it thin).

2. Place the dough balls in the center, spray the top with more cooking spray.

3. Roll thin.

4. Take a little bit flour, spread over the top of the dough and feel for sticky spots. We want to eliminate sticky spots before it goes on the peel.

5. Flip it over onto the peel, so that the floured surface is touching the peel. Make sure it isn't sticking. Add more flour if needed.

6. Spray the new top of the dough with a little more cooking spray. This helps get the right texture in the end. If making garlic naan, add the garlic before the cooking spray, add some cilantro right after.

7. Launch into pizza oven. Give it a few seconds then turn it. Keep a close eye or it will burn. You're done when you get some browning on the bubbles.

8. Brush butter on right away after removing.

Notas

This recipe required more flour to get the dough to come together and look like the video (maybe asuch as a quarter cup more?)

Trying a variation with 165g Greek yogurt, no egg, no milk (flour is ok that way, no extra added - possibly too dry?)
