Chocolate Hazelnut & Pear Cake

i’d never snack on a pear the way i would an apple..but pears in cakes? that’s a different story

the perfect chocolate cake, topped with sliced pears and chopped hazelnuts for crunch!

180g plain flour

40g cocoa powder bloomed with 3 tbsp hot water

3 tsp instant coffee powder

3/4 baking powder

1/4 baking soda

pinch of salt

1 egg or 70g mashed banana/1 flaxegg

3 tbsp choc nut butter @sunfly.world

95ml vegetable oil

120g coconut sugar @peaksupps

110ml soy milk @plenishdrinks + tbsp lemon juice

2 pears, washed and sliced

chopped hazelnuts

Instrucciones

preheat oven to 165 fan and line a 7” tin

first mix the cocoa powder espresso and hot water and set aside

combine the milk, lemon juice in a large bowl and let curdle for a few mins

then whisk in the egg, cocoa mixture, oil, hazelnut butter, coconut sugar

sieve in the dry ingredients and fold until just combined

add to the baking tin, smooth out and top with sliced pears (skin on is fine) and chopped hazelnuts

bake for 50mins-55mins until a cake tester comes out clean

once relatively cool, slice and serve with yoghurt, custard or ice cream!
