Bombay Potatoes

2 large red onion
6 garlic cloves
1/4 inch minced ginger
1 tsp cumin seeds
1/2 tsp coriander, cumin, chilli powder each
1/4 tsp turmeric powder + hing each
Diced tomatoes
salt + pepper to taste
4 or 5 large potatoes
2 cups vegetable stock
Instrucciones
fry the minced garlic, ginger and onion in a few tbsp vegetable oil on a low/medium heat for 10 minutes before adding the spices and frying for another 5 minutes.
add your diced tomatoes, splash of water and let that reduce into a thick paste.
add the diced, part boiled potatoes salt and pepper then cover and simmer for 10-15 minutes.
a few minutes towards the end, stir in coriander and garam masala the serve and enjoy!
