Chickpea Nourish Bowls

In oven:
1 head of broccoli
1 red onion sliced
1 can of chickpeas
1 sweet potato diced
Olive oil
smoked paprika
Garlic powder
Salt
black pepper
Red pepper flakes
Fresh rosemary, thyme (fresh optional)
On stovetop:
Quinoa
Sauce:
3/4 cups Tahini
1/2 lemon juiced
2-3 cloves diced garlic
Black pepper
1-3 tbsp warm water
Instrucciones
Preheat oven to 400F
Cook 1 cup of quinoa on stove using vegetable broth.
Add all veggies to sheet pan. Season and toss with oil. Bake for 35 min, toss halfway.
Mix together sauce
Put together bowl
