Ginger Sesame Broccoli & Cabbage Salad

3 tablespoons olive oil
12 ounces (1- to 1 1/2-inch) broccoli florets (about 5 cups)
1/2 teaspoon kosher salt
2 tablespoons water
Half a head of white cabbage, thinly sliced
1/2 cup Cilantro chopped
Ginger Sesame Dressing:
2cm fresh ginger (or 2tbsp of grated)
2 garlic cloves
Juice of 1 lemon
1/4 cup rice vinegar
4 tbsp of olive oil
2 tbsp of tahini
2 tbsp of maple syrup
1 tbsp tamari or soy sauce
1 tbsp water
1 tsp sesame oil
Pinch of salt
Instrucciones
Step 1
Heat 3 tablespoons olive oil in a large stainless steel or cast iron skillet over medium-high heat until shimmering. Add 12 ounces broccoli florets in a single layer. Season with 1/2 teaspoon kosher salt. Let cook undisturbed for 2 minutes. Toss and continue cooking until browned in spots, about 2 minutes.
Step 2
Add 2 tablespoons water, cover immediately, and cook until the broccoli is knife-tender and bright green, about 2 minutes.
Step 3
Add all dressing ingredients to a blender and let it rip.
Step 4
Once broccoli is done, toss broccoli with cabbage and dressing.
Notas
Pairs well with Miso Steak or Asian style short ribs
