One Pan Coconut Fish Curry

Ingredientes

Curry Sauce

1 1/2 tbsp red curry paste

2 tsp brown sugar

2 tsp chicken stock powder

400ml coconut milk

150ml water

1 tsp fish sauce

1 tsp light soy sauce

For the Pan

250g cooked brown rice

1/2 cup chopped butternut pumpkin

1/2 cup chopped zucchini

1 cup chopped broccolini

400g fish fillets (firm white fish works best)

Lime wedges, to serve

Crispy chilli oil, to serve

Coriander, to garnish

Fried Shallots, to serve

Instrucciones

In a bowl, combine red curry paste, brown sugar, stock powder, coconut milk, water, fish sauce and soy sauce. Whisk until smooth.

Add rice to a wide pan, then top with pumpkin, zucchini and broccolini. Place the fish on top. Pour over the curry sauce, cover with a lid and simmer gently for 10–15 minutes, until the fish is cooked through and flakes easily.

Finish with lime, crispy chilli oil, coriander and fried shallots.
